Can i wire just a ceiling light off a wireless remote control socket so it will turn on/off?

Are you using the remote socket at the moment? if so you should already have the supply for the light running into the socket then the cable leading from the socket up to your light, it will still work if you leave the ceiling light connected but disconnect any additional appliances connected to the socket.
